<p>Mleté maso vždy vyžaduje rychlou tepelnou úpravu; tím, že je rozmělněné, má sklony se snáze kazit. Nejinak je tomu s mletým jehněčím. Pokud se vám poštěstí sehnat maso z důvěryhodného zdroje, máte nespočet možností, co z něj v kuchyni připravit.</p>



<p>Typický pro mleté jehněčí je lůj, který je tužší než u vepřového či hovězího – při přípravě budete mít pocit, že tenká vrstvička jehněčího tuku je všude. Z mletého připravíte masové koule, klofty, šašlik, pastýřský koláč. Promícháme s jehněčím masem spolu se solí a pepřem. Vytvarujeme 2 burgery vysoké cca 2-3 cm, zabalíme do potravinové fólie nebo alobalu a necháme je 30 minut odpočinout při pokojové teplotě. Počítejte s tím, že maso při pečení ztratí na objemu zhruba 20 %.</div></li><li id="wprm-recipe-5104-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Rozpálíme gril nebo na pánvi olej a burgery opečeme z obou stran zhruba 4 minuty tak, aby zůstaly uvnitř šťavnaté.</div></li><li id="wprm-recipe-5104-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Rozřízneme žemli a řeznou stranou opečeme na pánvi na sucho.</div></li><li id="wprm-recipe-5104-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Seskládáme burger tak, že dolní žemli potřeme majolkou, přidáme rajčata nakrájená na plátky, cibuli na kroužky. Na ně položíme burger. Na pánev hodíme sýr a necháme ho roztavit, stačí několik málo vteřin; je-li sýr tučný a pánev teplá, rozteče se sýr velmi rychle. <p>V našem receptu jsme připravili šťavnatý jehněčí burger. Ačkoliv mleté jehněčí láká k experimentům s exotickými přísadami (např. máta, citrón), pokud chcete toto maso vyzkoušet, vsaďte na jistotu: maso stačí ochutit česnekem, solí a čerstvě nadrceným pepřem, vytvarovat burgery a <strong>opéct je na pánvi nebo venkovním grilu</strong>. Hotový jej vložte mezi žemli, poklaďte nakrájenými rajčaty, cibulkou, překryjte rozpečeným sýrem, a máte postaráno o královský oběd nebo večeři.</p>

<h2 class="wp-block-heading">Burger z mletého jehněčího: tipy a rady</h2>



<ul class="wp-block-list"><li>Burger před vložením na pánev <strong>ve střední části mírně smáčkněte</strong>. Burgery mají tendenci se uprostřed vyboulit, smáčknutím zůstanou hezky ploché.</li><li><strong>Nedělejte burgery příliš tenké</strong>, maso bude zbytečně vysušené.</li><li>Nikdy burger neotáčejte víc než jednou, jednak ho můžete poškodit a také může zbytečně pustit šťávu a ztratit tak šťavnatost. <strong>Při otáčení do burgeru nepíchejte!</strong></li><li>Pečivo na burger použijte spíše hutnější, které se nerozpadají. Pokud je žemle sušší, <strong>potřete ji na řezu máslem a nechte zrůžovět na pánvi</strong>. Pečivo bude lépe držet pohromadě a nesrovnatelně lépe chutnat.</li><li>Plnění burgerů záleži na vašich chuťových preferencích a tomu, co právě nabízí vaše lednička. <strong>Nebojte se experimentovat, ale s příliš mnoha výraznými chutěmi to nepřehánějte.</strong> Cílem je, aby se v každém soustě všechny chutě příjemně prolínaly, ale žádná nepřebíjela další.</li><li>Nebojte se také zeleninu krátce opéct. Rajčata i cibule se krájí na plátky (kroužky), „prdelky“ rajčat do burgeru nepatří!</li><li>Pepř použijte ideálně čerstvě nadrcený, mám ho doma na mlýnku, to samé chilli vločky.</li></ul>

<p>Miluju vůně indické kuchyně. A jedno z mých nejoblíbenějších koření pro ni typických je <strong>tandoori</strong>. Použila jsem ho v receptu na tuhle grilovanou dobrotu s poněkud exotickým názvem krůtí <strong>tikka</strong>, kde je tandoori navíc smíchané s jogurtem. Božská to kombinace!</p>



<p>Místo salátu se krůtí tikka podává s <strong>okurkovou raitou</strong>, jakýmsi ekvivalentem našeho okurkového salátu se zakysanou smetanou. Je to moc dobré, lehké, a i když je potřeba více druhů surovin, tak velmi jednoduché. Vřele doporučuji jako změnu klasické grilovačky.</p>

V míse smícháme všechny ostatní ingredience a přidáme cibuli a česnek. Do vzniklé pasty naložíme maso a necháme alespoň 2 hodiny marinovat v lednici.</div></li><li id="wprm-recipe-1848-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Mezitím si připravíme okurkovou raitu. Okurku nastrouháme nahrubo a osolíme malou špetkou soli. Necháme asi 15 minut odstát, okurka pustí šťávu. Poté slijeme šťávu a do nastrouhané okurky přidáme bílý jogurt, najemno nasekanou jarní cibulku, pepř a případně ještě dosolíme.</div></li><li id="wprm-recipe-1848-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Po dvou hodinách ugrilujeme maso na venkovním grilu, ale je možné i doma v troubě s grilem. Podáváme s vychlazenou okurkovou raitou a pečivem, ideálně indickým dálem.</div></li></ul></div></div>

<h2>Krůtí tikka z grilu a okurková raita: tipy a rady</h2>

<li>Tandoori pasta je běžně k do<span class="fr-marker" style="display: none; line-height: 0;" data-id="0" data-type="false">​</span><span class="fr-marker" style="display: none; line-height: 0;" data-id="0" data-type="true">​</span>stání ve větších supermarketech. Pokud tandoori pastu neseženete, můžete ji nahradit sypkým tandoori kořením.</li>
<li>Vodu z okurky nemusíme vylévat, je moc dobrá jen tak k vypití, anebo z ní můžete připravit <b>okurkovou limonádu</b>. Stačí přidat citrónovou šťávu a trochu cukru a zamíchat. Poté ji naředit do skleničky jemně perlivou nebo perlivou vodou a přidat pár kostek ledu. Je to úžasně osvěžující nápoj v horkých letních dnech.</li>

Dochutíme solí a pepřem. Můžeme použít i grilovací koření, ale pozor, tyto směsi bývají hodně slané. Nechte vyniknout chuť masa.</div></li><li id="wprm-recipe-1596-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Z ochuceného mletého vytvarujeme placičky a válečky o průměru asi 7 cm. Myslete na to, že se maso asi o čtvrtinu smrskne.</div></li><li id="wprm-recipe-1596-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Grilujeme na dobře rozpáleném grilu z každé strany 5-7 minut. Jestli jsou dost propečené zjistíme tak, že jednu masovou placičku rozpůlíme. Pro ty, co mají rádi více propečené, ještě necháme nějakou tu minutku navíc na grilu.</div></li></ul></div></div>

<h2>Rychlá grilovačka</h2>
<p>A proto jsem tady s tímhle receptem: vtip je <strong>v mletém masu</strong>, které se dá rychle připravit a hned hodit na gril. Perfektně se k němu hodí <strong><a href="/redkvickovy-dip-k-masu-na-grilu/">dipy</a>, do kterých se grilované „karbanátky“ namáčejí</strong>.</p>

<p>Základem tradiční quacamole je zralé avokádo rozdrcené s mořskou solí v <a href="/hmozdir-v-kuchyni/" target="_blank" rel="noopener noreferrer"><u>hmoždíři</u></a> pomocí tloučku. Podle druhu receptu se do základu přidává rajče, cibule, česnek, citronová nebo limetková šťáva, koriandr, bazalka.</p>
<h2>Guacamole: tipy a rady k přípravě</h2>
<ul class="">
<li>Avokádo by mělo být opravdu zralé. Měkké, ale pružné na dotek. Někdy se dají koupit avokáda s označením RTE (ready to eat – připravené k jídlu). Když je neseženete, kupte klidně tvrdší, budete jen muset nějaký ten den počkat, dokud avokádo nezměkne.</li>
<li>Avokádo nemusíte mixovat, ale můžete ho rozmačkat vidličkou, já mám raději hladkou pastu.</li>

<p>Tyhle hamburgery dělané na grilu jsou <strong>specialitka mého nastávajícího švagra</strong>, s jeho svolením jsem si recept půjčila a předkládám vám jej zde na blogu.</p>



<p>Domácí hamburgery podle švagrova receptu nejsou extra náročné, ale na přípravu potřebujete víc ingrediencí, než bývá obvyklé. U nás v rodině je při grilování zvyk, že si předem vše hezky nachystáme na prostřený stůl, a potom si každý k hamburgeru vybere, na co má chuť.</p>

Vytvoříme placky o 1 cm větší, než je průměr housky, protože hamburger při pečení zmenší svůj objem.</div></li><li id="wprm-recipe-1495-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Na polovině rozpáleného grilu si opečeme maso z každé strany 5 minut, aby byly hamburgery dobře propečené. Kdo chce úpravu rare, peče jen 3 minuty z každé strany.</div></li><li id="wprm-recipe-1495-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Když už dopékáme z druhé strany, položíme na maso plátek sýru, který se během dopékání rozpustí.</div></li><li id="wprm-recipe-1495-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Na druhé polovině grilu upečeme anglickou slaninu dozlatova z obou stran. Jakmile je hotová, stáhneme ji z grilu a na uvolněné místo položíme poloviny housek, řeznou stranou dolů, a jemně je opékáme dozlatova.</div></li><li id="wprm-recipe-1495-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Když je všechno opečené, můžeme servírovat na stůl, kde už jsou připravené další přísady a kondimenty na ochucení hamburgeru.</div></li></ul></div></div>

Na majonézu položíme maso, na něj slaninu, smaženou cibulku, okurku salát, rajčata a nakonec jalapeňos.</span><div class="wprm-spacer"></div>
<span style="display: block;">Příprava hamburgerů je jednoduchá, zvládnou i začátečníci. Příprava nezabere víc jak 20 minut, pečení dalších 10-15 minut.</span><div class="wprm-spacer"></div>

<h2>Grilujeme domácí hamburgery: jak na to</h2>
<ul>
<li>Je spousta tipů jak zjistit jestli už je maso propečené, ale nejsnazší cesta je <strong>jeden rozříznout</strong> a podívat se na řez masa.</li>
<li>Pekaři nabízejí různé <strong>bulky na hamburgery</strong>, my však máme rádi klasické české housky a nikoliv americké, které jdou chuťově do sladka. Samozřejmě kolik jazyků, tolik chutí; tyhle hamburgery jsou výborné v jakémkoliv pečivu.</li>
<li>Do hamburgeru si nemusíte dát všechno, co máme rádi my. V tom je ta výhoda obloženého stolu &#8211; každý si vybere, nač má chuť, kombinacím se meze nekladou 🙂</li>
