<p>Na čočkový salát jsem použila dva druhy čočky – červenou a klasickou kuchyňskou čočku. Do salátu přidávám tvaroh a zakysanou smetanu, která pokrm zjemní. Důležitou ingrediencí je tempeh.</p>

<p>Tempeh je produkt, který k&nbsp;nám přišel z&nbsp;Indonésie. Připravuje se ze sójových bobů (podobně jako tofu). Na rozdíl od tofu se však sójové boby pro výrobu tempehu nechávají fermentovat, jsou tak lépe stravitelné a mají výraznější chuť.</p>

Klasickou čočku je dobré mít naloženou ve vodě den předem, aby změkla. Pozor na červenou čočku, vaří se jenom pár minut.</span></div></li><li id="wprm-recipe-13260-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Kapie očistíme, zbavíme zrníček a dáme je péct na plechu do předem vyhřáté trouby (ideálně s funkcí grilu) na 200 °C po dobu 15 minut.</span></div></li><li id="wprm-recipe-13260-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Připravíme si zálivku na luštěninový salát. V nádobě smícháme zakysanou smetanu, tvaroh a do směsi přidáme utřené stroužky česneku se solí. Nakonec přidáme na drobno nakrájenou pažitku.</span></div></li><li id="wprm-recipe-13260-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Obě vychladlé druhy čočky dáme do mísy, přidáme tempech nakrájený na kostičky, pórek nakrájený na kolečka, upečené a nakrájené kapie, lžíci olivového oleje a vše promícháme. 										<content:encoded><![CDATA[<p>Přátelé, jak jste na tom se salátovou okurkou? Doma ji krájím dětem ke každému jídlu (slanému, samozřejmě :), jen tak k zakousnutí, nijak ji neochucuju. Jen občas se pustím do klasického okurkového salátu se sladkokyselou zálivkou.</p>
<p>U nás se okurkový salát dělal každou chvíli, <strong>pamatuju si, jak mě táta nechal poprvé připravit zálivku, a já solila, sladila, kyselila… </strong>až to táta musel vylít a připravit od základu fungl novou. Chce to mít chuť na jazyku, vyladit zálivku tak, aby nebyla moc ostrá, sladká, zkrátka tak akorát.</p>

<p>Přináším recept na okurkový salát, jak jej dělám dnes. <strong>Recept je pro dvě osoby – děti, jak jsem psala, mají nejraději okurku tak, jak ji pánbu stvořil.</strong> Okurkovou zálivku připravuju zvlášť v šejkru (nádobka s víčkem, třeba přesnídávková sklenička). Jdeme na to!</p>

Zavíčkujeme a důkladně proklepeme, až se vše spojí a cukr a sůl rozpustí.</div></li><li id="wprm-recipe-8035-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Ochutnáme a případně doladíme. Pokud se nám podaří zálivku přechutit, v nejhorším případě ji vylijeme a připravíme novou. Osvědčilo se mi připravovat zálivku bokem, než ji nalévat do mísy s nastrouhanou okurkou a honit v ní cukr, aby se rozpustil – ve studené vodě se cukru moc rozpouštět nechce.</div></li><li id="wprm-recipe-8035-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Vyladěnou zálivku nalijeme na nastrouhanou okurku, dochutíme pepřem, a nakonec zakápneme několika kapkami olivového oleje.</div></li></ul></div></div>

<h2 class="wp-block-heading">Jak vybírat okurky</h2>



<p>Pamatujete na starý dobrý vtip s Bohdalkou? Vyprávěla ho asi takhle:</p>



<ul class="wp-block-list"><li>„Přijde paní do obchodu a říká prodavači: Chtěla bych jednu okurku, hezky dlouhou a tenkou. Přijde další paní a vybírá si: Chci okurku, pořádně macatou, ani nemusí být tak dlouhá. Přijde si pro okurku třetí a prodavač se jí ptá: Tak co paninko, jakou dáme, krátkou, tlustou, nebo nějaké jiné speciální přání? A paní odpoví: Mně to je jedno, já ji mám do salátu.“</li></ul>



<p>Dobrá, trochu košilatý a napsaný nevyzní tak dobře, jako když vtip vyprávěla Bohdalová, ale chci navázat na výběr okurek: <strong>Mamka mi radila, že v obchodě si mám vybírat okurku spíše tenkou, delší, a vždycky si sáhnout na špičky okurky, jestli nejsou moc měkké.</strong> Pevná okurka znamená, že byla utržená před nedávnou dobou a je tedy dostatečně čerstvá.</p>



<p><strong>Nemám ráda baculaté okurky.</strong> Ty mají už hodně vyvinutý semeník, uprostřed jsou měkké až blátivé.</p>



<p>Nejlepší salátové okurky jsou samozřejmě <strong>z domácí zahrádky</strong> (děkuji babičce a dědovi, tedy tchyni a tchánovi, za pravidelný přísun pokladů z jejich zahrady!). Příští rok mám v plánu pořídit si také skleník, asi už jsem v tom správném věku, navíc mě moc naladila kamarádka, která už skleníkaří a strašně si to pochvaluje.</p>

<h2 class="wp-block-heading">Okurková zálivka</h2>



<p>Klasická okurková zálivka se skládá z vody a správně namíchaného poměru tří ingrediencí: <strong>cukru, soli a octa.</strong> Všechny tři suroviny mají příjemnou schopnost vzájemně chuť těch ostatních umocnit.</p>



<p>Místo klasického kvasného octa používám <span style="text-transform: none;"><strong>jablečný</strong> fermentovaný</span>, koupila jsem ho v DM Drogerii, ale seženete jej v každém lepším obchodě se zdravou výživou nebo na internetu. Případně nahraďte ocet citronem.</p>



<p>Další možností co na okurkový salát je <strong>zálivka ze zakysané smetany</strong>. Tady však musíte okurku nejdříve nechat vypotit: posolit ji a počkat, až pustí vodu. Tu pak z okurky vyždímejte, jinak se zakysaná smetana přebytečnou vodou z okurky naředí. Smetanové zálivce na salátovou okurku velmi sluší kopr.</p>



<h2 class="wp-block-heading">Jak strouhat okurky na salát?</h2>



<p>U nás se vždy strouhalo na klasickém struhadle nahrubo. Někdo má rád najemno, velmi efektní jsou tenká kolečka. Doma mám také <a rel="nofollow noopener noreferrer" href="https://www.chefshop.cz/mandolina-na-zeleninu-top-tools-wmf/?utm_source=aff&amp;utm_medium=dgt&amp;utm_content=dgt&amp;a_aid=5b86431feb286&amp;a_bid=8f6308bd" target="_blank"><strong><u><span style="text-transform: uppercase;">mandolínu kráječ</span></u></strong></a>, kterým jdou nakrájet ultra teninká kolečka. </p>



<p>Vypadají skvěle, chutnají velmi dobře (díky zachované struktuře okurky). Akorát je s tím víc práce a bordelu při následném čištění mandolíny.</p>

<h2 class="wp-block-heading">Proč olivový olej</h2>



<p>Když jsem si před pár měsíci dělala výživářský kurz, učili nás, že určité vitamíny se rozpouštějí pouze za přítomnosti tuku. Jedná se o vitamíny <strong>A, D, E, K</strong>. Existuje dobrá mnemotechnická pomůcka, jak si vitamíny zapamatovat – mrkněte na písmenka, určitě na ni přijdete.&nbsp;</p>



<p>Aby vitamíny, které do sebe při konzumaci salátu dostaneme, nepřišly vniveč, je vždy dobré salát zakápnout troškou kvalitního oleje. <span style="text-decoration: underline;"><strong><span style="text-transform: none;"><a href="https://mlsnavarecka.cz/muj-tip/olivovy-olej-panensky/" target="_blank" rel="noreferrer noopener" aria-label="Olivový panenský olej (otevře se na nové záložce)">Olivový panenský olej</a></span></strong></span> tomuto účelu poslouží velmi dobře.</p>



<p>Pepřem kořením salát až když je v misce. Používám <a href="/mlynky-na-koreni/"><strong><u><span style="text-transform: uppercase;">čerstvě mletý pepř z mlýnku</span></u></strong></a>.</p>

<h2>Salát z grilovaného lilku: tipy a rady</h2>
<ul>
<li>Lilek je ideální zelenina při hubnutí, upravený na mnoho způsobů si ho můžete v podstatě bez omezení &#8211; zejména proto, že obsahuje hodně vlákniny a až z 90 % ho tvoří voda. V lilku se nenachází žádný tuk, 100 gramů má pouze 35 kcal.</li>
<li>Lilek je také výborným zdrojem draslíku a v tomto směru předčí i zelí. Cenný je pro značné množství kyseliny listové, která v těle podporuje řadu prospěšných biochemických procesů. Lilek obsahuje celou řadu dalších minerálů a stopových prvků, jako je železo, hořčík, zinek a mangan.</li>
<li>Feta je bílý sýr původem z Řecka. Vyrábí se z čerstvého ovčího a kozího mléka v poměru min. 70 % ovčího a 30 % kozího a zraje ve slaném roztoku více než dva měsíce.</li>
<li>Feta je slaný sýr tvarohového typu, který má vyšší obsah tuku. Dá se využít jak ve studené, tak teplé kuchyni.</li>

<p>Tzatziki, zvukomalebné slovíčko, za nímž se skrývá osvěžující studená omáčka ze salátové okurky a řeckého jogurtu. A právě v Řecku, odkud tzatziki pochází, se tradičně podává k jídlům typu gyros nebo souvlaki.</p>



<p>O víkendu jsem rodině připravovala gyros z kuřecích stehenních řízků, a aby maso nebylo suché, navršila jsem na ně kopečky tzatziki. Příprava této okurkové omáčky je jednoduchá, potřebujete jen pár surovin. A tady je recept:</p>

<h2>Řecké tzatziki: rady a tipy</h2>
<ul>
<li>Ačkoliv je příprava tzatziki snadná, je třeba na její přípravu myslet předem. Jednak je ideální, pokud si tzatziki po přípravě může hodinku odpočinout v lednici, kdy se chutě rozloží a omáčka získá správnou teplotu, a také, pokud chcete nechat okurku vypotit a jogurt odkapat (viz dále), budete k tomu nějaký ten čas navíc také potřebovat.</li>
<li>Místo řeckého jogurtu můžete použít bílý plnotučný, nebo smetanový jogurt. Řecký však tztatziki dodá správný šmak, navíc řecké jogurty jsou v obchodech již běžně dostupné. Nepoužívejte odtučněnou verzi jogurtu, tzatziki by se rozteklo a nebylo by dobré.</li>
<li>Při honbě za dokonalým, pevným tzatziki, které se nebude roztékat, můžeme nechat odkapat i jogurt. Ideálně přes hrubé plátýnko, klidně přes noc (já jsem pouze vymačkala okurku, jogurt nikoliv, na konzistenci je to trochu znát, na chuti nikoliv 🙂</li>
<li>Pokud máte čerstvou, mladou salátovou okurku, nejlépe z domácí zahrádky, která má tenkou slupku, pak ji loupat nemusíte, a nastrouhejte ji i se slupkou.</li>
<li>Tzatziki se podává k masu, s čerstvou bagetkou nebo opečenými bramborami. Všechny kombinace chutnají božsky!</li>

<p>Zvláštní bylo, že <strong>caesar salát měl pokaždé jinou chuť</strong>, a také ty ingredience co se objevovaly na talíři se měnily podnik od podniku.</p>



<p>Až jednou jsem narazila na variaci, která mi chuťově vyrazila dech. Nedalo mi to a zeptala jsem se obsluhy, čím to, že ten salát má takový šmak. A dostalo se mi tajemství: <strong>v zálivce na pravý ceasar jsou nasekané sardelky!</strong></p>

V průběhu přípravy salátu krutonky hlídejte a včas je z trouby vytáhněte.</div></li><li id="wprm-recipe-3047-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Vyndáme z lednice parmezán; v pokojové teplotě se v něm hezky rozvinou všechny chutě a vůně, při servírování bude výraznější.</div></li><li id="wprm-recipe-3047-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Oddělíme jednotlivé listy římského salátu, omyjeme je pod tekoucí vodou (obzvláště u kořene bývají zbytky hlíny), a osušíme. Suché listy salátu jsou základ pro to, aby na nich dobře držela zálivka a nesklouzla z nich na dno mísy.</div></li><li id="wprm-recipe-3047-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Listy římského salátu nakrájíme na proužky velké tak, aby se daly dobře vložit do úst. Vložíme do velké mísy.</div></li><li id="wprm-recipe-3047-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Na přípravu zálivky na caesar se mi nejlépe osvědčil šejkr (stačí sklenička od přesnídávky nebo malá zavařovačka se šroubovacím víčkem). Do nádoby vložíme žloutky, nahrubo utřený česnek, najemno nasekané sardelky, hořčici a cukr. Zalijeme olivovým olejem, zastříkneme vinným octem, osolíme a opepříme, nejlépe čerstvým pepřem z mlýnku. Nádobu uzavřeme víčkem a řádně protřepeme, zálivka se hezky spojí v krémovou konzistenci. Připravenou zálivku dáme do ledničky.</div></li><li id="wprm-recipe-3047-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Slaninu nakrájíme na kousky a osmažíme. Osobně ji nemám ráda vypečenou do křupava, stáhnu ji z plotny o něco dříve a dám stranou na talířek.</div></li><li id="wprm-recipe-3047-step-0-7" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Kuřecí stehenní řízky očistíme, odblaníme a zbavíme případných chrupek. Nakrájíme na kousky. Rozpálíme výpek po slanině a vhodíme do něj kuřecí maso. Promícháme, aby se zálivka rovnoměrně dostala na všechny listy salátu. Takto upravený salát naložíme na talíř, na salát navrstvíme maso, zasypeme krutonky (kostičkami housky) a vrch posypeme hoblinkami parmezánu.</div></li></ul></div></div>

<p>Nedávno jsem si na sardelky vzpomněla, když jsem nakupovala v Globusu, náhodou se dostala mezi regály, kam obvykle nechodím, a narazila jsem na sardelky.</p>
<p>Přihodila jsem je do košíku a doma pak začala pátrat po receptu na nejlepší caesar salát, až jsem&#8230; jej našla 🙂</p>
<p>Nakoupila jsem zbytek surovin a pustila se do mého vlastnoručně připraveného césara. Musím se pochlubit: dopadl na výbornou! Tady je recept včetně postupu a mých poznatků (najdete je spolu s fotkami pod receptem):</p>

<h2>Jak na pravý Caesar salát? Tipy a rady</h2>
<h3 data-css="tve-u-1649eb37ecd">Zálivka na caesar salát</h3>
<p>Často se špekuluje nad tím, jak připravit zálivku na Caesar salát. Už jsem psala na začátku: dressing musí obsahovat sardelky, které dodají nezaměnitelnou chuť. Sardelky nejsou levné, ale když si krabičku koupíte domů, v ledničce v pohodě vydrží (minimálně do dalšího caesar salátu 🙂 Další povinnou přísadu tvoří vaječné žloutky. Ideální jsou bio vejce z kontrolovaného chovu, případně domácí či jiná čerstvá vajíčka. Přiznám se, že caesar jsem z čerstvých žloutků připravovala už několikrát a zatím se u nás žádná zdravotní újma nekonala.</p>

<p>K umíchání zálivky používám šejkr. Mám letitou plastovou nádobku akurátní velikosti, ale v pohodě si vystačíte s jakoukoliv malou zavařovačkou se šroubovacím víčkem. Zálivka se dá také vyšlehat, kdy ke žloutkům postupně přiléváte olej. Podobně se připravuje domácí majonéza. Zálivka má krémovitou konzistenci a hořčicovou barvu.</p>

<p>Často se k přípravě Césara používá ledový salát. To je ovšem kulinářská chybka, protože pravý Caesar vyžaduje salát římský. Ten je chuťově plnější než ledový, křupavý, s výraznější barvou.</p>

<h3 data-css="tve-u-1649eb20585">Maso na caesar salát</h3>
<p>Maso na salát můžete použít jakékoliv rychle připravitelné. Nejenom kuřecí, ale i vepřové (panenku, kýtu nakrájenou na tenké plátky). U nás frčí kuřecí stehenní řízky, sice je s nimi víc práce na přípravu (očistit, odblanit), ale jsou šťavnatější, než třeba kuřecí prsa, která jsou dost suchá, jsou-li pokrájená na nudličky a rychle osmažená.</p>
<p>A vůbec, věděli jste, že maso do Caesara vůbec není nutné? Odlehčená verze salátu může být v pohodě bezmasá, takže na své si přijdou i vegetariáni.</p>
<h3 data-css="tve-u-1649eb55425">Krutonky na posypání</h3>
<p>Krutonky neboli houstičky nakrájené na kostičky suším v troubě, dají se připravit také do zásoby. Pokud se vám nechce kvůli krutonům rozehřívat trouba, připravte si je na pánvi – buď nasucho, nebo na trošce oleje.</p>
<p>Nejlepší pro přípravu krutonků je starší bílé pečivo (nikoliv čerstvé).</p>

<p><strong>TIP: </strong>Nedávno jsem si pořídila <strong>mandolínu</strong>, kráječ, kterému můžu nastavit nože tak, aby z kedlubny nakrájel tenké proužky. Tomuto nudličkovému stylu se říká <strong>julienne</strong>. Mandolínu jsem si tedy při krájení kedlubny vzala k ruce, ale samozřejmě nakrájet kedlubnu na nudličky zvládnete i bez ní.</p>

<h2>Salát z kedlubny: vylepšení</h2>

<li class="">Pokud připravíte salát z čerstvé kedlubny, servírujte ho hned poté, co jej připravíte. Kedlubna krásně křupe a salát je opravdu svěží. Pokud byste salát připravovali dopředu, kedlubna ovadne a zakysaná smetana rozbředne.</li>
<li class="">Chcete-li vylepešenou variantu kedlubnového salátu, přidejte na kostičky nakrájený tučnější sýr (Eidam nebo Goudu).</li>
<li class="">Salát z kedlubny se dá jíst také jako lehká večeře, pak k němu připravte v <a href="/toustovac-idealni-pro-rychle-vecere/" target="_blank" rel="noopener noreferrer">topinkovači</a> dva plátky tmavého chleba.</li>
