<p>Při poslední návštěvě obchodu jsem do košíku hodila pytlík s&nbsp;polentou.
Dnes jsem vyzkoušela a za mě tedy velikánské překvapení. V&nbsp;dobrém slova
smyslu.</p>



<p>Jednalo se o <strong><a href="https://www.prozdravi.cz/polenta-1-min-bio-400-g.html?d=73126&amp;utm_source=dognet&amp;utm_medium=affiliate&amp;utm_campaign=5b86431feb286&amp;a_aid=5b86431feb286&amp;a_bid=c218e0e9" rel="sponsored"><span style="text-decoration: underline;">INSTANTNÍ POLENTU</span></a></strong>, už jen ten příslib „za minutu hotovo“ mi dělal dobře na duši. Jen málo z&nbsp;nás nebojuje s&nbsp;časem, každá úspora se počítá. </p>



<p>Polentu jsem připravila na dva způsoby: jako přílohovou kaši a do zbytku jsem nakrájela kostičky aromatického sýra, rozestřela do pekáčku, nechala zatuhnout, nakrájela na trojúhelníčky a takto připravené placky jsem osmažila na másle. Moc a moc dobré, doporučuji!</p>

Pozor, polenta při vaření prská a bublá, chová se v pánvi podobně, jako kdyby docházelo k mini erupcím. Počítejte s tím a buďte opatrní, abyste se neopařili.</div></li><li id="wprm-recipe-10256-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Polentu necháme asi minutu povařit a stáhneme z plotýnky. Na povrch položíme plátek másla a necháme rozpustit. Zamícháme do polentové kaše.</div></li><li id="wprm-recipe-10256-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Pokrájíme si sýr na malé kostičky. Zamícháme do kaše.</div></li><li id="wprm-recipe-10256-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Kaši rozprostřeme do pekáčku nebo na plech do vrstvy vysoké asi 1 cm. Pekáček předtím můžete vytřít olivovým olejem.</div></li><li id="wprm-recipe-10256-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Polentovou kaši necháme zcela vychladnout.</div></li><li id="wprm-recipe-10256-step-0-7" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Plát polentové kaše krájíme na libovolné tvary (já vsadila na trojúhelníčky) a ty pak opékáme na másle. Doporučuji nepřilnavou pánev a nepříliš vysokou teplotu při opékání. Na polentových plackách se vytvoří zlatavá krusta.</div></li></ul></div></div>

<h2 class="wp-block-heading">Co je polenta</h2>



<p>Polenta je <strong>kukuřičná kaše</strong>, u nás ji nejčastěji koupíte v&nbsp;instantní podobě jako sypkou směs. </p>



<p>Příprava polentové kaše je velmi jednoduchá, stačí povařit polentu v&nbsp;osolené vodě, množství a poměry jsou vždy uvedené na sáčku s&nbsp;balením.</p>



<p>Polenta je připravená z&nbsp;kukuřice, je <strong>přirozeně bezlepková</strong> a do svého jídelníčku ji tak zařazují celiaci. </p>

<h2 class="wp-block-heading">Co z&nbsp;polenty?</h2>



<p>Polenta se nejčastěji připravuje naslano, na internetu však najdete i sladké recepty. Pěkně zpracovaný článek o polentě je ten od Florentýny <a href="https://www.kucharkaprodceru.cz/polenta-recept/" target="_blank" rel="noreferrer noopener" aria-label="TADY (otevře se na nové záložce)">TADY</a>.</p>



<p>Já jsem polentu využila k&nbsp;okamžitému servírování – jako kaši k&nbsp;vepřovým nudličkám (<strong>pro recept si klikněte </strong><a href="https://mlsnavarecka.cz/veprove-nudlicky-v-jogurtove-marinade/"><strong><span style="text-decoration: underline;">SEM</span></strong></a>). Ze zbytku jsem připravila placky.</p>



<p>Polenta má tu vlastnost, že pokud ji hned nespotřebujete, začne tuhnout. Toho se dá využít k&nbsp;nejrůznějším kulinářským experimentům. </p>



<p>Z&nbsp;vychladlé polenty se nejčastěji dělají placky, které
se opékají na másle. Hezký povrch utvoří grilovací pánev, nebo, pokud přeje
počasí, můžete si placky rovnou ugrilovat na venkovním grilu. </p>



<p class="has-background" style="background-color:#fffcf5">Do polentové kaše před vychladnutím (zatuhnutím) přidejte ingredience, které vám chutnají a které kaši chuťově obohatí. Často se do polenty přidává aromatický <strong>sýr, česnek, bylinky, ale i slanina osmažená na kostičky.</strong> </p>



<p>Pokud chcete mít polentové placky hezky zabarvené dožluta,
přidejte trochu kurkumy. </p>



<p><strong>TIP: </strong>Jestliže polentu zapomenete ještě teplou rozetřít do pekáčku nebo na plech, rozválejte ztuhlou polentu válečkem na těsto. </p>

Slijeme a necháme chvilku vychladnout, aby byly jen tak teplé, kdy je budeme moct vzít do rukou a oloupat.</div></li><li id="wprm-recipe-9463-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Mezitím si ohřejeme hovězí vývar a nakrájíme cibuli, pažitku.</div></li><li id="wprm-recipe-9463-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Připravíme si zálivku na salát. Do šejkru (stačí sklenička na přesnídávku se šroubovacím víčkem) nalijeme olej, ocet, přidáme hořčici a cukr. Šejkr důkladně protřepeme, až se vytvoří krémová olejovitá zálivka.</div></li><li id="wprm-recipe-9463-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Ještě teplé brambory oloupeme, brambory nakrájíme na kolečka silná asi 0,5 cm. Plátky brambor poklademe na talíř a zalijeme teplým vývarem. Promícháme opatrně odspoda vidličkou. Vývar se vsákne, brambory zčásti uvolní škrob, který případné zbytky vývaru zahustí.</div></li><li id="wprm-recipe-9463-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Brambory přelijeme zálivkou, přidáme cibuli a pažitku, osolíme a opepříme, zlehka promícháme.</div></li><li id="wprm-recipe-9463-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Vídeňský bramborový salát necháme chvilku odstát a podáváme ještě teplý.</div></li></ul></div></div>

<p>Receptů na vídeňský salát najdete spousty, já jsem sáhla po <strong>originálním receptu</strong>, který jsem našla na jednom vyhlášeném rakouském webu o vaření. Když jsem pak tenhle recept porovnávala s&nbsp;postupem od <a href="https://www.super.cz/400112-hledate-inspiraci-zdenek-pohlreich-prozradil-jaky-bramborovy-salat-ma-nejradeji.html">Zdeňka Pohlreicha</a>, s&nbsp;potěšením jsem zjistila, že se oba recepty příliš neliší. Pro mě dobré znamení, že bude recept fungovat. </p>



<p>Vídeňský bramborový salát se vám může zdát být chudý, ale
nenechte se mýlit. Zálivka z&nbsp;trošky oleje, octa, hořčice a špetky cukru,
to vše ve spojení se zalitím ještě horkých brambor hovězím vývarem, funguje bez
chybičky. </p>



<p>Pojďte si vídeňský salát vyzkoušet. Dost možná si ho oblíbíte <strong>jako alternativu ke klasickému vánočnímu bramborovému salátu</strong>, nebo si jej budete připravovat jako <strong>lehký letní salát</strong>, když bude venku hic.</p>

<h2 class="wp-block-heading">Jaké brambory do salátu?</h2>



<p>V&nbsp;Rakousku doporučují speciální salátovou odrůdu brambor, zvanou rohlíčky. Ty se dají sehnat i u nás, známe je jako <strong>Keřkovské rohlíčky</strong> a jsou oblíbené právě do salátů pro svoji pevnou dužninu, kterou si uchovávají i po uvaření. </p>



<p>Pokud Keřkovské rohlíčky neseženete, sáhněte v&nbsp;obchodu <strong>po bramborách varného typu A</strong>, které nejsou škrobovité, nerozpadají se a do salátů jsou nejvhodnější. </p>

<p>Brambory na vídeňský salát vezměte spíše větší, <strong>vybírejte stejně velké kusy</strong>, aby se menší nerozvařily a ty větší stále byly tuhé. Brambory na vídeňský salát se krájÍ na plátky, proto je důležité, aby po uvaření zůstaly v&nbsp;celku. </p>

<h2 class="wp-block-heading">Olej a ocet do zálivky</h2>



<p>Olej používám buď slunečnicový nebo řepkový. Oba se hodí i
pro studenou kuchyni, mají dobrou chuť. </p>



<p>Ocet beru jablečný nebo vinný, klasický kvasný ocet je
příliš silný, intenzivní chuti. Vezměte raději jemnější ocet, který nebude v&nbsp;salátu
tolik dominovat. </p>



<h2 class="wp-block-heading">Hovězí vývar do vídeňského salátu</h2>



<p>No jo, nemyslím si, že většině z&nbsp;nás se na sporáku táhne hovězí vývar, abychom mohli část odebrat a zalít jím brambory v&nbsp;salátu. </p>



<p>Domácí hovězí vývar je samozřejmě nejlepší variantou, nicméně dnes je fenomén vývarů docela rozšířený a existuje několik firem, které poctivé vývary vyrábějí a prodávají hotové, k&nbsp;okamžitému použití. </p>



<p>Pokud na takový vývar někde v&nbsp;obchodě narazíte (bývá ve velké sklenici, případně zahuštěný v&nbsp;menší skleničce), kupte si jej a mějte jej doma ve špajzce. Věřte, že při vaření se vývar neztratí. </p>



<p>Nejlepší volbou je tedy domácí hovězí vývar, případně
kupovaný, dále lze sáhnout po zahuštěném vývaru bez přidání chemikálií – lze koupit
také v&nbsp;obchodě. Neberte levné masoxové kostky, jejich umělá chuť přebije
ve vídeňském salátu vše ostatní. </p>

<h2 class="wp-block-heading">Vídeňský salát: další tipy a rady</h2>



<ul class="wp-block-list"><li><strong>Cibuli používám červenou</strong>, tvoří v&nbsp;salátu hezký kontrast než klasická, běžná kuchyňská cibule. </li><li>Salátu sluší svěží zelená, <strong>přidávám jemně nasekanou pažitku</strong>. Kromě pažitky se hodí také petrželka nebo nějaké chuťově méně výrazné lístky zelených salátů. </li><li>Tento rakouský salát se podává teplý jako příloha, případně samostatně, lze jej třeba obložit vařenými vejci.</li><li>Kdo si hlídá linii, drží dietu nebo ze zdravotních důvodů nemůže tradiční bramborový salát s&nbsp;majonézou, může si dát vídeňský salát jako <strong>fitness alternativu k&nbsp;vánočnímu salátu.</strong> </li></ul>

<p><strong>TIP: </strong>Dušené zelí připravuju z čerstvé hlávky, nezahušťuju ho moukou, ale nakonec k němu přidávám poctivě másla, které chuť zelí zjemní a přidá mu skvělou chuť. </p>



<h2 class="wp-block-heading">Dušené červené zelí ke kachně: tipy a rady</h2>



<ul class="wp-block-list"><li>V obchodech koupíte také hotové <strong>sterilizované zelí</strong>, práci ulehčí, protože zelí je již nakrouhané, ale musíte jej umět správně dochutit – každé obsahuje jiný základ, jiné ochucující suroviny.</li><li>Dobré je také <strong>karamelizované červené zelí</strong>, kdy se cukr do zelí jednoduše nepřidává, ale nechá se nejdříve na pánvi zkaramelizovat.</li><li>Červené zelí lze ochutit různými ingrediencemi: místo cukru přidejte med, zajímavou chuť zajistí brusinky, rozinky nebo pikantní marmeláda, například rybízová. Místo vody podlijte zelí červeným vínem. Přidejte divoké koření: bobkový list, kuličky nového koření nebo jalovce (<strong>doporučuji koření zabalit do gázy, aby šlo ze zelí jednoduše vyndat</strong>).</li><li><strong>Kluci v akci</strong> připravují ke kachně červené zelí s rozinkami, medem a loupanými mandlemi.</li><li><strong>Zdeněk Pohlreich</strong> zelí nedusí, ale blanšíruje, tedy krátce jej povaří ve vroucí osolené vodě a následně prudce zchladí. Zelí si zachová svěží barvu a není zašedlé. Nezapomeňte, že potřebujeme oblažit nejenom naše chuťové buňky, ale jíme také očima.</li><li>Červené dušené zelí se výborně hodí k pečené kachně, svatomartinské huse a dalším masům připravovaným v troubě.</li></ul>

<p>S postupem času, který trávím v kuchyni vyvářením pro svoje věčně hladové, jsem zjistila, že jednou z nejméně oblíbených příloh jsou vařené brambory.</p>



<p>Děti mají odpor zafixovaný ze školní jídelny, kde se na jednom talíři potkává rozvařený brambor s takovým, který by si zasloužil pobýt ve vroucí vodě o hezkých pár minut déle. A pro manžela jsou zase vařené brambory „moc suché“.</p>



<p>Naštěstí jsou možnosti, jak je upravit v poživatelné verzi i pro mlsné jazyky, které mám doma. Jednou z vděčných úprav jsou <strong>brambory pečené v troubě na plechu, vymaštěném olejem</strong>. Jednoduchý a oblíbený recept, u kterého si můžu být jistá, že se mi do kuchyně vrátí prázdný talíř.</p>

<h3 class="wp-block-heading">Postup:</h3>



<ol class="wp-block-list"><li>Brambory očistíme a oškrábeme, nové brambory můžeme péct i se slupkou.</li><li>Brambory nakrájíme na kolečka o tloušťce asi 0,5 cm.</li><li>Na plech nalijeme asi 2 lžíce oleje.</li><li>Přisypeme nakrájené brambory, okořeníme směsí na brambory nebo solí a pepřem.</li><li>Rukama promícháme, aby se brambory obalily olejem s kořenicí směsí.</li><li>Dáme péct do vyhřáté trouby asi na hodinu.</li></ol>

<ul class="wp-block-list"><li><strong>Brambory můžete péct i nasucho, bez oleje.</strong> V takovém případě je nesolte. Brambory nakrájejte na silnější kusy, ty se při pečení „nafouknou“. Až budou upečené (nasucho trvají déle, než pečené na vymaštěném plechu), vezměte do ruky čistou utěrku, smáčkněte každou upečenou bramboru zvlášť a dejte je do mísy. Pak je osolte, poklaďte kousky másla, přikryjte utěrkou a nechte chvíli odpočívat, než se máslo rozpustí.</li><li>Brambory pečené na plechu na troše oleje <strong>jsou vynikající se zakysanou smetanou, osolenou a ochucenou česnekem</strong>. <p>Dnes mám pro vás úžasně jednoduchý, chutný recept. Dělávám ho, když potřebuju <strong>rychlou večeři </strong>a nechce se mi moc přemýšlet, co hodit do hrnce. </p>



<p>Základem receptu jsou brambory a šlehačka, taková ta hezky smetanová, s obsahem tuku alespoň 30% &#8211; tedy žádná dvanáctiprocentní smetana na vaření.</p>



<p>Brambory stačí oškrábat, naskládat na pekáč, osolit, ochutit česnekem a zalít šlehačkou. Dát do trouby a za hodinu je hotovo! Děti tenhle recept milují, a já vlastně taky, protože nevyžaduje žádné extra kuchařské umění.</p>

<h2>Brambory pečené v troubě: tipy a rady</h2>
<ul>
<li>Tyhle brambory můžete použít také jako přílohu, ideální jsou <a href="https://mlsnavarecka.cz/veprova-krkovice-pecena-v-troube/">k masu</a>.</li>
<li>Pokud naopak potřebujete lehčí večeři, přidejte k pečeným bramborám zeleninový salát.</li>
<li>Nebo ještě horké brambory posypte nastrouhaným sýrem.</li>
<li>Nepoužívejte prosím smetanu na vaření, potřebujeme poctivý tuk, aby brambory dostaly chuť. Ideální je 30% šlehačka.</li>
<li>Nepleťte si šlehačku se zakysanou smetanou. Pokud byste k bramborám dali zakysanou smetanu, zdrcne se, a je jedno, jestli obsahuje 10% nebo 20% tuku.</li>
<li>Česnek přidejte k bramborám podle chuti. Někdo rád víc, jiný zase česneku nemůže přijít na chuť.</li>
<li>Přidaná větvička rozmarýnu brambory nádherně provoní. Pokud rozmarýn nemáte, přidejte bylinky, jaké máte po ruce – pažitku, tymián, bazalku. Zelené lístky jsou skvělý bonus (k už tak dobrému jídlu).</li>
<li>Rozmarýnovou větvičku z brambor po upečení odstraňte, brambory na talíři můžete ozdobit čerstvou bylinkou, např. petrželkou.</li>
